My mom made roast beef. We had roast beef nights, full spread. Imagine homemade cornbread. Vegetables from the vegetable aisle…Mostly salad, but sometimes there were soups or stews. Roast beef nights were great.
At home, roast beef is a delicious slab of bone sheared, highly permeated, soft and tender, viscous meat that makes you remember to (1) use a knife and fork, and (2) chew.
Then sandwiches happened, and I finally met the roast beef and cheese classic. Topped with lettuce and mayo-I think. I traded my mom’s (not processed) ham sandwich with American government block cheese.
